He looks like the sun says it loves him but only wants him for his body hair. Is there a magical Tolkien-y reason his hair is always backlit by the sun? Or was that just how the AI drew him?

I prompted for sunrise for this particular set. That being said, my headcanon is that Finarfin's hair is kind of magical, possessing its own special light, and Fëanor wanted to use *that* to make the Silmarils but went with his daughter Galadriel's hair for Reasons [which got Galadriel angry and she decided they were "unfriends forever"].
